I try to setup SFS on my own PC (with IIS) as a server able to manage my swf located on my website but I didn't find any doc.

Is a server (like IIS or APACHE...is still required to makes SFS accept requests from another server ?

Humm... I am not sure if I completely understand your question, anyway I think I got it.
Actually you always need 2 servers for publishing an online multiplayer application:
1) The web server (apache / IIS) > where you store all the swf files and other html pages if necessary
2) Multiplayer server (smartfoxserver) which will handle all the multiuser interaction
The 2 servers not necessarily must be installed on the same server machine.
We have plans to add an embedded webserver to SFS after we release the new, upcoming version 1.4.0

As my ISP refused to host SFS I decided to make it run on my PC.
So I'd like to keep all my web pages on my host as usual but configurate swf games to target my own PC (which stand a fixed IP).
In this case swf are still located on my ISP website (which uses Linux)
Does I still need to set up IIS to make SFS run on my XP computer ?
