I'd concur with Bax. Linux support with Java is just more straightfoward on a server - less updating annoyances.

As for distro, my choices are minimal installs of either CentOS or Ubuntu LTS. I use Debian too, but I prefer the version stability of the other two more. It probably doesn't matter though since there's rarely anything else installed other than Java + SFS2X.

I would go with Ubuntu. In the years, CentOS has proved to be the Linux distribution which game more problems with SFS.
