Is (or will) User.setProperty deprecated?

Given the new UserVariable system, is there any remaining reason to be using the custom properties on the User object? The docs make it sound like we should all be using the new UserVariables even for server-side values.

Why does properties still exist?

Session object visibility

The docs suggest using session variables to persist a few authentication values between USER_LOGIN and USER_JOIN_ZONE.

I just want to confirm that the session object isn't visible to the client.

I think you're missing a step. Look at BigFIsh's sticky guide on How to compile a .jar file.

The docs do assume quite a lot about whether you already know Java.

Try adding characterEncoding to your connection string. For example,

jdbc:mysql://localhost/some_db?useUnicode=yes&characterEncoding=UTF-8

Nominally, the connector pulls the global database setting. It probably doesn't get it per table, hence the problem above.
