Processes not running as root were not allowed to bind to ports below 1024.
So had to use port 8080, then use iptables to forward traffic from port 80 to 8080 internally.

You are like some kind of genius. Fixed. I have to admit I found that post earlier and failed to read the bit properly about where the Java home directory is.
I had to use '/usr/libexec/java_home' rather than simply dumping in Library/Java/Home.

I checked my java preferences and the order was as follows...
J2SE 5.0 32-bit
Java SE6 64-bit
J2SE 5.0 64-bit
So I jut swapped the order to put 'Java SE6 64-bit' at the top instead, and boom all of a sudden it runs fine...

Update problem on a mac
Just tried this update on a fresh install of 1.6.6 on a mac...
On startup just get a 'Bad version number in .class file' error message and it aborts straight away...
Any ideas, or is this update not meant for mac users?
